If young-earth creationists are correct in their assertion that dinosaurs and man walked the earth at the same time, shouldn't there be some evidence of it?

Genesis 1 says that man and land animals (including dinosaurs) were created on day 6. But shouldn’t we find records of man's encounters with these magnificent beasts? Indeed, we do!

This talk was originally titled "Dinosaurs in Art and History". It reviews the large number of human cultural artifacts that reveal ancient man did indeed encounter dinosaurs. Biblical descriptions of dinosaurs are also presented.

How can this be true if dinosaurs (according to evolutionists) died out 60+ million years before man came on the scene. The response of evolutionists to this evidence will also be shared. (Spoiler alert: It doesn't hold up.)
